You can specify any PIDs or PID ranges you want, or get the full mux delivered.
If you tune by virtual channel or specify a program number the HDHomeRun will set the PID filter automatically for that sub-channel and regenerate the PAT so you get a SPTS.

If there are no Detect Channels button it means the Tuning Adapter has told the HDHomeRun there are no channels.
I can double check - can you please enable "send diagnostic information" in the HDHomeRun app settings menu then reply back with the Device ID.

The HDHomeRun app has a full grid guide. From Live TV simply press the back button to activate the grid guide.
Slice guide serves a different purpose - to see what is on right now on other channels without having to channel surf or interrupt viewing.

The app now puts all favorite channels at the top of the guide.
If the first set of channels have a yellow star then it means all of those channels are favorites.

The HDHomeRun supports discovery via IPv6 site-multicast.
If you have IPv6 running with global IP addresses you should be able to configure your VLAN router to pass the site-multicast discovery packet between VLANs.

It is confusing two completely different and incompatible DRM schemes.
The DRM required by CableCARD is supported by the HDHomeRun app for iPhone/iPad.
The DRM controlled by A3SA being used on ATSC 3.0 is incompatible with iPhone and iPad (nothing to do with our app).

The HDHomeRun apps work by automatic discovery. IPv4 discovery is local subnet but with IPv6 the HDHomeRun supports site-local multicast discovery.
